{"id":188682,"date":"2022-08-03T08:27:10","date_gmt":"2022-08-03T12:27:10","guid":{"rendered":"https:\/\/today.uconn.edu\/?p=188682"},"modified":"2022-08-03T08:27:10","modified_gmt":"2022-08-03T12:27:10","slug":"eat-it-up-riley-courtney-spreads-nutrition-education-to-connecticut-residents-of-all-ages","status":"publish","type":"post","link":"https:\/\/today.uconn.edu\/2022\/08\/eat-it-up-riley-courtney-spreads-nutrition-education-to-connecticut-residents-of-all-ages\/","title":{"rendered":"Eat It Up: Riley Courtney Spreads Nutrition Education to Connecticut Residents of All Ages"},"content":{"rendered":"<p>Riley Courtney \u201825 (<a href=\"https:\/\/cahnr.uconn.edu\">CAHNR<\/a>) is spending the summer supporting UConn Extension\u2019s mission to educate the community by teaching diverse groups, from lacrosse campers to senior citizens, to up their game when it comes to nutrition.<\/p>\n<p>Courtney, originally from Ridgefield, Connecticut, is working close to home this summer as an extension intern in Fairfield County. (Contributed photo)<\/figcaption><\/figure>\n<p>\u201cIt\u2019s really enjoyable,\u201d Courtney says. \u201cWorking with families, everyone\u2019s so engaged and happy to be there and learn about how to be healthier. People do want to be healthy; it\u2019s just about providing them with the tools to get there.\u201d<\/p>\n<p>For example, Courtney went to a farmer\u2019s market in Danbury with a table of prepared meals to show people what they can do with the produce they pick up at the market. Courtney has also worked with a children\u2019s lacrosse camp in Bridgeport and senior centers in the county.<\/p>\n<p>Another program, called Growing Gardens, works with Fodor Farm in Norwalk to teach families how to grow seasonal produce like tomatoes or squash, and provides participants with access to an herb garden. The program also includes recipe demonstrations that families get to try.<\/p>\n<p>Courtney is working with registered dietitians for this internship and learning from their nutritional expertise along the way.<\/p>\n<p>\u201cI really like the idea of working with registered dietitians,\u201d Courtney says. \u201cI can learn from them. They\u2019re very knowledgeable.<\/p>\n<p>After UConn, Courtney, who is a kinesiology major, wants to become a health and wellness professional.
