So, it\u2019s critical that those rations are safe to eat.<\/p>\n<p>UConn alum Genevieve Flock \u201912 (CAHNR) \u201917 Ph.D. helps ensure the safety of military food rations thanks to the training she received at UConn.<\/p>\n<p><img decoding=\"async\" class=\"alignleft wp-image-209097 img-responsive lazyload\" data-src=\"https:\/\/today.uconn.edu\/wp-content\/uploads\/2024\/01\/cahnr_10th_blue-green-300x139.png\" alt=\"CAHNR 10th Anniversary of Health badge\" width=\"180\" height=\"84\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 180px; --smush-placeholder-aspect-ratio: 180\/84;\" \/>Flock is a research microbiologist for the U.S. Army Combat Capabilities Development Command Soldier Center (DEVCOM) where her work includes topics like low moisture food safety, atmospheric water harvesting, validation of foodborne pathogen detection technologies and pathogen viability sensors.<\/p>\n<p>\u201cI constantly get to learn new things and find new, creative solutions for the soldier,\u201d Flock says.<\/p>\n<p>Flock\u2019s interest in food microbiology began as an undergraduate at UConn where she majored in environmental science with a minor in animal science.<\/p>\n<p>Through her minor, she took influential classes in the <a href=\"https:\/\/cahnr.uconn.edu\">College of Agriculture, Health and Natural Resources<\/a> (CAHNR) like food microbiology with Kumar Venkitanarayanan, CAHNR associate dean for research and graduate studies and professor of animal science.<\/p>\n<p>After trying out several internships in environmental science, Flock decided to turn to public-health focused work in food safety. She stayed at UConn to pursue her Ph.D. with Venkitanarayanan.<\/p>\n<p>\u201cHaving really good mentors in animal science got me interested in more of the public health side,\u201d Flock says. \u201cI shifted gears and thought I could have more success and fulfillment working in the public health area.\u201d<\/p>\n<p>When Flock was looking for a job, Venkitanarayanan helped her connect with a former student of his who was working at the U.S. Army DEVCOM Soldier Center.<\/p>\n<p>The kind of applied work the Center did aligned well with Flock\u2019s interests and experiences.<\/p>\n<p>For her dissertation, Flock had studied a bacterium called <em>Clostridioides difficile<\/em> and its potential as a food-borne pathogen.<\/p>\n<p>Like more well-known known food-borne pathogens such as <em>Salmonella<\/em> or <em>E. coli<\/em>, <em>Clostridioides<\/em> <em>difficile<\/em> was present in soil and water but its risk to humans through food like lettuce was not well understood at the time.<\/p>\n<p>Flock says her graduate work helped prepare her for the project she is doing now through her appointment as a research biologist in UMass Lowell\u2019s HEROES (Harnessing Emerging Research Opportunities to Empower Soldiers) program.<\/p>\n<p>Flock is working with probiotics which, like <em>Clostridioides difficile<\/em>, are anaerobic organisms that can be difficult to grow in the lab.<\/p>\n<p>Flock is investigating ways to improve the survivability of probiotics, which have a host of health benefits, in high-heat environments.<\/p>\n<p>This is important because most probiotic products are designed to be refrigerated. But soldiers need to keep their rations in the field, which is often a very hot environment.<\/p>\n<p>\u201cThe stability in the commercial space is not as important,\u201d says Flock. \u201cBut for military use, if it were to be included in a food product, we don\u2019t always have access to refrigeration. So, that high temperature survivability aspect continues to be a challenge.\u201d<\/p>\n<p>Flock is also working on low-moisture food safety.<\/p>\n<p>Recently, there have been outbreaks of food-borne pathogens like <em>Salmonella<\/em> or <i>E. coli<\/i>\u00a0in ingredients like flour and whey powder.<\/p>\n<p>These ingredients are found in common ration items like protein bars or shakes.
